Some more healthy and easy recipes for you!

I’m not a recipe guy and this isn’t a recipe blog but I get a lot of questions about them and they seemed to be quite popular so here are two more for you folks.

I’ll start with an easy and healthy homemade jam in less than a minute (of prep anyway):

Simply toss some of your favorite berries into a blender with some chia seeds, and a bit of honey. Blend, poor into a jar and place in the fridge over night. The chia seeds create a lovely jelly-like texture to the berries and honey.

It won’t be as sweet as the commercial but I guarantee it will taste way more fresh. It’s easy and free of artificial sugars and pectin!

The base recipe is courtesy of Gluten Free Expo but as you know, I ad-lib’d a bit and removed the quantities.

The next one is a new favourite, a cold mustard and dill sweet potato salad.

I’d use one potato for a personal side dish or 2 or 3 for a dinner, depending on the size of your dinner party. Boil or nuke the sweet potatoes then let them cool down a bit so you can cut up the potatoes into small pieces, leaving the skin on so you get all the nutrients.

Then in the mixing bowl, add the ingredients for the sauce to the potatoes. The sauce should be about a 1/3 mayo to 2/3 mustard. And then add dill to taste and to provide great colour.

I would also add some garlic, onions or fresh chives to taste.

I can’t remember where I got the idea for this one but it was some magazine I saw a while back. And it’s perfect for summer so I’ve been making it a lot to bring over to friends’ houses.  They now think I’m fancy.
