Recipe: Healthy pancakes, anyone?

Hello there, need some more healthy recipes for your favourite morning meal? Who doesn’t?

I forgot exactly where I found the inspiration for this recipe but I’m glad I did. I always liked pancakes since it brought me back to the good old days when my Mommy made me a big breakfast before I had to play a hockey game. But most pancake mixes are not the healthiest so I’ve gone away from them over the year.

This recipe is great since it’s easy and healthy. All you need is:

  • Egg whites
  • Banana
  • Oatmeal
  • Cinnamon (optional)

As I usually do, I’m not a huge fan of measuring.But for people who are, I usually use one whole banana with half a small carton of egg whites and what I estimate to be 2-3 cups of oatmeal, along with a few pinches of cinnamon. You can also add blueberries or chocolate chips in there too if you’re feeling crazy like that!

As you know for pancakes, you need a hot surface to cook them so I use avocado oil since it can burn hotter. Like other pancakes, flip them when they start to bubble. These pancakes don’t become as fluffy as the ones your Grandma made so beware. They’re WAY more dense so make about half of the volume you usually consume.

The great thing about these is the ease. Few ingredients, easy to make. And also no guilty feeling after. And no gluten for those who don’t do well with it.

As always I top my pancakes with peanut butter and maple syrup as I can’t eat pancakes otherwise. Don’t knock it until you try it folks, I’ve converted a few people over the years.

It now gives me energy for my games of oldtimers hockey. The years have passed but I still get as excited!
